Bumble Bee SuperFresh™ Frozen Salmon with Garden Pesto Review

First of all, anyone who follows this blog regularly will realize that this is one of only about two seafood posts here. It’s no secret I’m not a big fish eater, so when Bumble Bee® offered to send me samples of their new Bumble Bee SuperFresh™ frozen seafood line, I was hesitant. But I took it on, because one, I love to try new things and I’m trying to branch out into the world of (so insanely good-for-you) fish, and two, because it was another review opportunity, and a chance to mix up my blog content.

Anyway, Bumble Bee® makes six different types of seafood recipes for their new line: Tilapia with Lemon, Pepper and Herbs; Tilapia with Garlic and Extra Virgin Olive Oil; Spicy Shrimp Romesco; Lemon Shrimp with Garlic and Herbs; Salmon with Garlicky Black Pepper and Extra Virgin Olive Oil; and, the one I sampled, Salmon with Garden Pesto. I’m a sucker for pesto, this is not news, so I had to give this one a shot. I’ve never been a salmon fan, though, unless it’s smoked. (What? I’m a Jersey Jew, lox is in my blood.)

My favorite thing about this line is the ingredient list. Each product contains only a handful of ingredients and absolutely zero preservatives or sketchy chemicals. The ingredients read like recipes you’d make in your own kitchen, frozen into handy packets for your convenience. Thanks to that, the nutrition stats are pretty solid. The ingredient list on the Garden Pesto Salmon, for instance, is: Extra Virgin Olive Oil, basil, Parmesan cheese, almonds, parsley, fresh garlic, black pepper. Each filet (there are two per package) has 230 calories, 11g of fat, 40 mg of cholesterol, 170 mg of sodium and 26g of protein. It also has 0g of sugar, 0g of trans fat and is gluten-free. Convenient, quick and full of natural ingredients…can’t beat that, really.

And these really take very little time to prepare. The salmon takes 20 minutes in a 400-degree oven. The shrimp only takes about 6 minutes on the stove. That’s about as quick and convenient as you can get. And the tilapia and salmon come with their own parchment packets, so there’s virtually no clean up. You just open the sealed packet with the filets, pop each one in its individual parchment, place on a baking sheet and bake. The shrimp has to cook in a pan on the stove, but you’re still only left with a pan and maybe a utensil or two to clean when all is said and done. They come with their own butter and seasoning medallions, so you just cook the shrimp in the pan, add the included seasoning and stir to coat.

So, obviously, the big question now is, “How was it?” Well, to be perfectly honest…I still don’t like salmon. But that doesn’t mean this product was no good. The two filets cooked up perfectly in 20 minutes in the parchment and came out soft, flaky and steaming. The pesto seasoning was absolutely delicious (almost as good as my own, dare I say–and they even use parsley and almonds in their pesto like I do!). I only picked at it because clearly I’m not going to be embracing salmon anytime soon, but Kevin really enjoyed it and nearly finished his. He only stopped because he was full. I served it over red quinoa, but this would be wonderful with rice, greens or tossed into a salad. The texture, color and consistency of the fish seemed dead-on and it didn’t taste frozen or dried out, which is what I so often worry about with frozen entrees. This tasted like someone prepared it in their own kitchen, flash-froze it and shipped it to my door.

While I’m not a big seafood eater, I am a shrimp fan, and these were oh-my-goodness delicious! I ate them on their own because I made them late on a weekend night and Kevin and I split them as more of a small meal/big snack than a full dinner, but these would be amazing tossed in some angel hair or linguini pasta. I’m actually going to be on the lookout for this one in stores so I can buy it again and try that–like a super-quick shrimp scampi. Seriously, though, between the two of us, the dozen or so shrimp were gone in under 10 minutes. I can’t wait to try the Spicy Shrimp Romesco!

It’s a great way to introduce people like me, who don’t know much about preparing or serving seafood, to the world of seafood with completely seasoned and prepared recipes. It’s also great for anyone who needs convenience in their life (don’t we all) but who doesn’t want to sacrifice health or flavor. I’d gladly serve these to others in a heartbeat without feeling embarrassed about serving frozen food at a dinner party. I’m willing to bet that if I served these to someone and didn’t tell them they were pre-made and frozen, they’d never know.

I’d definitely buy these again, especially the shrimp, and I’d recommend them to my friends and family who are looking for a quick, non-hassle way to prepare fresh-tasting, flavorful, nutritious seafood dishes.

31-recipe challenge Day 20: Butterscotch pudding and Liebster Blog Award

Before we get started, I’d like to note that it is February 28, and it is the final day of my 31-recipe challenge, and my final day of cooking. I have a few more posts to get out to be all caught up, but this is it. I want it on record that I HAVE made all 31 (well, 30) recipes in the 28 days of February. In the words of Top Chef, at the end of today it’s “knives down, hands up.” Done-zo.

But until then…

I was so excited to make this pudding. Butterscotch pudding…are there any two more beautifully paired words in the English language?

Butterscotch pudding, when done right, is one of those things you find yourself daydreaming about, craving at any hour. Basically, it’s heaven in a bowl…

…until I lay my hands on it. I had such high hopes for this one, and it came out, well, a flop. Now, the recipe from Jennifer at Foodess is not to blame; her pudding looked DIVINE. My ineptitude with anything remotely dessert-y is to blame here. It’s a vicious curse, really…a woman with a sweet tooth as voracious as mine can’t make dessert. That’s irony. (I’m 0 for 2 on puddings here; they are clearly not my forte. Remember the bread pudding?)

To be honest, I have no idea where this began going downhill. I followed the recipe exactly (I didn’t even halve it!), and when I put the finished pudding in the fridge, it seemed fine.  But when I went to taste-test hours later, the texture was totally off-putting. It was gritty, grainy and curdled (ugh!).The one good thing, at least, was the flavor. (Thank you very much, Johnnie Walker Black Label. Good scotch=good butterscotch.)

Sure, I had encountered some curdling through the cooking process, but I didn’t freak…Jenn said that may happen, and if so, just our through a strainer before storing in the fridge. I guess mine wasn’t fine-meshed enough, or the curdling continued during refrigeration. I’m not sure. As for the grittiness…I got nothing. The caramel/butterscotch base (i.e., the molten sugar) was smooth and creamy, not grainy and sugary, so that’s not to blame. I’m out.

My one true disaster actually occurred early on. My successful caramel was actually my second attempt–my first attempt burnt to a crisp and filled my apartment with smoke. My eyes were burning, my dog was whimpering, I was running around half-blinded to open all the windows in the vicinity. At one point, I thought turning on the ceiling fan in the kitchen would help, but instead it just blew the burnt-sugar smoke into the living room, the foyer, the hallway. The dog and I took refuge in the bathroom (the only safe place) until we could breathe and see again. That was tragic, and nearly ruined the saucepan. (Two days of soaking, scrubbing and boiling water later, it’s like new!)

Needless to say, I watched round two like a hawk–at exactly that five-minute mark, off the heat. And it was lovely.

Anyway, let’s move on from this disaster that was (not) butterscotch pudding.

On Tuesday, I received the Liebster Blog Award from Sherry at Cafe Vita! I’m so excited! My little blog finally got noticed, and this is my first-EVER blogging award! The Liebster Blog Award is given to new bloggers that only have about 200 followers. “Liebster” is German for dearest, loveliest or favorite.

What have I gotten myself into?

So, between the time I announced my 31-recipe challenge and now, I’ve started actually reading the recipes in full (probably something I should have done BEFORE taking this on), and all I can think right now is, “What have I gotten myself into?

You see, just looking over the list and the pretty, seductive, inviting pictures, I was lulled into a false sense of security–if they can make that, I can make that. What I don’t take into account is “they” probably have a full size kitchen stocked with all the right tools, a huge island, double ovens, six burners and some blue birds to pull the cookies out the oven. I have an apartment kitchen with a tiny counter, tiny oven, drawers filled with an assortment of maybe-the-right-tool and a dog running around. I’m like Julie Powell without the gimlets or the book deal.

Not to mention, while I realize there will be a great time investment involved, I hadn’t fully taken into account the monetary investment–short ribs, whole duck, FIVE POUNDS of duck fat??? (I’m looking at you, duck confit) Those are not exactly budget ingredients. Thankfully I can pretty much subside on Greek yogurt and apples otherwise, because, as you may or may not know, I don’t exactly rake it in.

My only real solace right now is that my experiment starts promptly on February 1, which is promptly two days before Super Bowl, for which Kevin is having a party. For which I more or less demanded that I make at least two things off my list. So hopefully that can help get the ball rolling. (And no, I’m not making duck confit for Super Bowl Sunday. I know you’re all wondering.) And Kevin. Kevin loves to cook too, and he’s great at prep, so knowing I have an extra set of hands in all this is a  relief. Plus, I have a month of opportunities to wear my cute new apron.

I still have about a week to peel myself off the ceiling and bring my heart rate back down to semi-human levels before I dive head-first into what may either be one of the coolest or one of the stupidest things I’ve ever done (or both.) In the meantime, I have to refocus, avert my attention to the play I’m in this weekend (closing weekend), and BREATHE. Breathe…breathe…again…

I’m getting there. If nothing else, keep checking back in to watch my month-long journey toward mental breakdown. It should be fun, and definitely tasty!

An Anniversary and an Announcement!

I can’t even believe it, but Life, Liberty and the Pursuit of Foodiness is ONE YEAR OLD today! Holy cow!

One year ago today, I decided, partially on a whim, to start a food blog. My life wasn’t where I wanted it to be, so I figured, why not do something I want, then? Something that’s entirely in my control.

Looking back, a year doesn’t seem that long. But then when I look at where I was a year ago compared to where I am today, it seems like an eternity. A year ago, I was out of work, so I was serving at a Cuban restaurant full-time. While I loved my coworkers and the atmosphere and even some of the customers, overall I hated the job. I was unhappy. And I remember sitting in front of the heating vent in my old house, watching the Food Network, which inspired my very first post.

Today, a year later, I am working full-time (at my old job, in political polling), I’ve moved out of the house I grew up in and I am looking into moving again.

Hurricane Sandy happened, and I learned to truly be thankful for what I have and to count my blessings. We were incredibly lucky–we only lost power for a few days and a few (recovered) pieces of siding off our chimney. Walking out your door and seeing the extent of the destruction right in front of you, seeing beaches you grew up on decimated, is an unimaginably eye-opening experience. It’s easy to forget the fragility in life.

So, clearly, some major life changed have happened this year, and this blog was one of them. So here’s to 2013 at LLPF–it can only get even better!

But now, on that note, I have a big birthday announcement to make! I’m taking on a new project here at the blog, and I figured there’s no better time to announce that than on the first anniversary!

Starting next month, I am going to undertake a 31-recipe challenge. Over the month of February, I will cook each and every dish on this list (thank you, Buzzfeed!) I will not make any more than *minor* substitutions. That is, even though I don’t like beets, I will make and try the beet salad. Even though I rarely eat fish and have never, ever prepared it, I will make miso-glazed cod. Because, when all is said and done, I might just discover that I enjoyed it!

I’m doing this for several reasons:
1. These recipes look damn delicious.
2. Accountability and a constant content source–I have been far too intermittent with this blog at times, between all the other things going on in my life (work, moving, Sandy, repeatedly involving myself in theater productions [sorrynotsorry]), but this will give me a) a consistent flow of recipes and experiences to blog about and b) accountability. I said I’m going to do this, and I will!
3. An opportunity to expand my horizons, both in the kitchen and at the table–There are plenty of things in here I have never, ever cooked before (braised short ribs, most desserts, soup) and things I never eat/don’t like/haven’t tried. But by cooking all of these recipes, as is, I will be learning new things in the kitchen and trying new foods or rediscovering old foods I didn’t think I liked. And if I still don’t like it in the end, so be it. But I may discover I like things I didn’t before.

So, there you have it. I know the list says “31 Things to Cook in January,” but I’m waiting to start until February because, well, it’s already 10 days into January, so that’s valuable time lost. Also, I’m starting tech week for a play this weekend (yeah, yeah, another one!) so my cooking time will be pretty much minimal.

Guess what I’m cooking up!

I’m coming back with a very special holiday post for you all! Can you guess what it is? Hint: that’s a big batch of chocolate ganache I just cooked up. What could I be making for you with that? I guess you’ll have to come back and see!

Am I the only person in the world who can’t make kale chips?

It’s no secret that I don’t bake. I’m just not good at it. I mean, last Christmas I had a pretty successful cookie-making run, but that was not without help. (In the form of both human and Kitchenaid stand mixer.) But overall, I’m not a baker. I can cook on the stove top, but once that oven turns on, it’s hit or miss for me.

Which is probably why, even though everyone and their mother are making kale chips, I managed to burn them.

Yup. Not even five minutes in the oven and I burned ’em. Just in case anyone needed further proof that I can’t bake.

Now, here’s where you, my lovely readers, come in. I’m going to tell you what I did, and hopefully someone out there will be able to tell me where I went wrong. Because seriously, if kale chips are so hot right now, there must be a reason, and I want in on the secret, dammit!

I am not going to return to burying myself in a bag of potato chips. I will make successful, tasty kale chips!

So, here’s how it went down:

I took roughly half to 3/4 of a bunch of kale, cut off the stems and tore the leaves (leaving the center stems behind.) I laid them out on paper-towel lined baking sheets to dry and covered with more paper towels. After they dried, I tossed them with olive oil, salt and black pepper, then laid them back out on the baking sheets (sans paper towels), sprinkled with a little more salt and pepper, and into the oven they went (Preheated to 375F.) One sheet was on the middle rack, one on the top rack. Five minutes in, both racks were starting to burn.

I was all excited about these, too. When I went to Sickle’s Market with Kevin a couple weeks ago, I saw a big, green bunch of kale sitting there, and I had to have it. I have had kale chips on my radar for quite some time, since they’re popping up on just about every healthy eating blog. I was super-stoked to get such a yummy-looking bunch of kale and share my own chip recipe with you all. (If I was successful, I was even going to try my hand at kale chip nachos!)

Alas…this happened. Though it may be a lot funnier than if I had succeeded, it still bums me out. Plus, my house reeked of burnt kale. The night before a showing. That wasn’t so good.

So, tell me…where did I go wrong??

So. Much. Produce.

My fridge has been lacking in the produce lately, so I was very glad when I had a half day at work last week and Kevin and I could hit the farmer’s markets. He only needed to get corn for dinner that night, but I walked away with a far more impressive haul:

We made our rounds. We started at Sickle’s Market, a part garden center, part farmer’s market and part general store. It’s a year-round place, with the majority of the produce and groceries indoors, but the quality and selection is more akin to a good farmer’s market than a supermarket.

Anyway, everywhere I turned I found something else I had to have. It’s a miracle I only walked away with what I did.

I ended up walking away with a bunch of kale (meant to make kale chips, but that didn’t go quite as planned–more on that later), five nectarines, a quart of Jersey-fresh blueberries and half a watermelon. There was also an almond croissant in there that didn’t make it through the car ride home. (Don’t judge.)

We also hit a small, local produce stand, Trader Joe’s and Wegman’s, where I grabbed a couple of avocados so I could make more of this before leaving on vacation.

Over the weekend, I also got a goody bag of home-grown tomatoes and cucumbers from a friend of mine. She’s been growing them in her yard and had more than she knew what to do with, so I gladly volunteered to take some of that pesky produce off her hands. Then I realized I don’t know what to do with five tomatoes and four cucumbers either. So I’ve been eating a lot of tomato, mozzarella and basil salad and drinking tons of cucumber-lemon water. I’m not complaining.

Oh, and in case you were wondering, Kevin did get the fresh Jersey corn he was looking for–and it was delicious! It was so sweet it didn’t even need butter. Just boiled with some salt, and I could’ve eaten all six ears! Also, I forgot how much fun it can be to shuck corn. (I can’t believe I just said that.)

Speaking of vacation, (I spoke of it somewhere, I’m sure…) I’m getting pretty stoked to go to Disney World in two days! (Yup, I’m a child. Whatever. Happiest place on Earth, man.) Anyway, I’ve been compiling a list of certain things I want to try to do while I’m down there this time around. It’s a little lopsided though:

Yup, my Things I want to eat list is far longer than my Things I want to do list, especially since some of the things I want to do a really food-related anyway. Really, though, is anyone even surprised? I’ll be lucky if they’re not rolling me out of the parks. The saddest part is there is literally, like, one healthy thing on that food list, and that’s the AK egg roll stand (really!) because I want to go there for their veggie spring rolls, Asian noodle salad and fruit salad.

What? I’m on vacation. Don’t judge.

Well, not quite yet. Right now, I’m still at work, eating avocado-black bean salsa and wishing I was already in sunny Florida. (New Jersey’s a bit cloudy today…)

A sad day…an ode to my bullet blender

Well, it’s a sad day here at LLPF. Anyone who follows this blog on a regular basis knows how much I love my bullet blender and how I swear by it. Well, today, I am sorry to say, my bullet blender moved on. It died. I went to make a pre-work breakfast smoothie (a rarity for me in and of itself–I never have that kind of time before work) and found my bullet could no longer blend.

It could, however, screech like an electric screwdriver stripping a screw and send shards of rubber flying everywhere while heating up and emitting a lovely burned plastic smell. So, alas, the bullet is no more.

And I still have the components of an unblended smoothie sitting in a cup in my fridge:

I’m back, baby! Plus, an anniversary…and chicken balls.

Well, it’s been one solid month (and one day) since I posted anything, but I swear I have a (pretty) good explanation–I was in a musical! Yup, I was part of my first full-scale musical theater production since college and I couldn’t have been happier! We were in rehearsals since May, but June and July really put things into full-swing with dress rehearsals, tech week and performances. I spent days going straight from work to the theater, only home to sleep, really. But it was all worth it.

Unfortunately, juggling a full-time job, a packed rehearsal schedule AND a food blog is a little too much, and something had to give. And since I couldn’t very well just stop showing up to work (as nice as that would be!), I had to take some time off from the blog.

Oh, did I mention one of my coworkers was out the first week of tech rehearsals, so on top of everything else, I was pulling double-duty at work. Yeah, there was no free time.

But now the show is closed and I’m back and better than ever! And lucky for you, I have some recipes and other fun stuff banked from before the show that I can share! (Since I did literally no cooking during the run.  Honestly, I don’t think I turned my stove on for four weeks.)

In other news, today’s a pretty big day here–it’s officially my six-month blogging anniversary! I can’t believe I started Life, Liberty and the Pursuit of Foodiness six months ago–on a whim, no less!

Now, technically, since I just took a month off, I’m not sure I can actually call this my six-month blogiversary. BUT, it IS still the six-month anniversary of the blog itself. It has been in existence for six months, even if I haven’t always been here. So, I guess it’s more of a happy birthday to LLPF than a happy anniversary to me. Either way, this is a milestone I’m happy to hit and the perfect day for my big return!

No worries, plenty of yummy (and healthy!) goodness will be coming your way soon! Glad to be back! 🙂

I suck. Seriously. But I’ll try making it up with a hummus salad.

I suck.  I mean, I really, really, suck.  It’s been almost two weeks and I haven’t written, haven’t cooked, haven’t gone out to a great new restaurant. Rather, I’ve been taking way too long to adapt to a new (albeit, temporary) schedule, since I’ve decided to try my hand at theater again while still working and writing. It’s clearly not going so well. Most of my weekdays involve getting to work by 8, home between 5 and 5:30, then at rehearsal by 7. That leaves me a very small window to eat, change and run whatever necessary errands I have.

There has certainly been one change for the good. For the past 10 months, I’ve been a waitress. When I went back to work, I became a part-time waitress. But even that once-a-week shift typically took up my entire Saturday. Well, I’m no longer a waitress, so, thankfully, my metaphorical plate is a little less full now.

Why is this good news? (Besides the obvious salvaging of my sanity?) Because now I will have at least part, if not all, of my Saturdays free to cook, eat and blog! Because clearly, that needs to be a priority again.

Now that I have a bit more time on my hands, I can devote some more weekly prep time, so hopefully my meals don’t end up being Lean Cuisines, convenience store sandwiches and coffee shop breakfasts. (Seriously, health aside, it’s not good on the wallet. And I’m out a job here.)

All that being said, I’ll make it up to, at least a little bit, right here and now, with a banked “recipe” (if you can even call it that) that I’ve been putting off posting.

It’s such a quick lunch or dinner, a super-healthy salad with an unconventional dressing you’ve probably never thought of: hummus.

Say what?

No, really. This salad was actually inspired by a favorite sandwich of mine. Anyone who’s read this blog or follows me on Twitter or Facebook has heard me mention the Twisted Tree Cafe, a vegetarian/vegan eatery two doors down from my office. This place makes even a meat-eater like me want to go veg. And they have this sandwich that I am just a sucker for called, simply, the hummus sandwich.

It’s pretty much just what it sounds like. Roasted red pepper hummus topped with tons of fresh veggies–spring mix greens, tomato, alfalfa sprouts, onion and avocado all on their homemade bread. Let me tell you, that bread really makes it. That stuff is just the best.

The first time I had this sandwich it totally changed my way of thinking–I had never thought to use hummus as the base of a sandwich before. I’ve used it as a condiment and spread plenty of times, but to actually make it the star of the sandwich? Preposterous! Or so I thought. Crazy in theory, perhaps, but genius in execution.

So, to wrap up a long story, I was craving some of this hummus-y goodness at home one day, but I knew my silly store-bought bread wouldn’t live up, so I wasn’t really feeling a sandwich. But I figured I could get all the key components of this in a salad, and I just went grocery shopping, so I had tons of fresh veggies lying around.

My salad’s not identical to the sandwich, and your salad won’t be identical to mine–I used what I had, and it was delicious.

(On closer inspection of their menu, I see they also offer hummus over their big garden salad. See? Not so crazy after all!)

Hummus Salad

Romaine lettuce leaves, torn or chopped
Bibb lettuce leaves, torn or chopped
Cubed tomato, seeds scooped out
Chopped avocado
Chopped fresh green beans
Chopped celery
Arugula
Chopped flat-leaf parsley
Roasted red pepper hummus (if you make this yourself, awesome! If not, like me, use a store-bought one. I promise I won’t tell.)

Combine all the veggies together in a bowl (after rinsing and drying well, of course) and in place of salad dressing, top with a heaping tablespoon or two of hummus.

That’s it. Really. So fast, so healthy, so yummy! And the hummus offers a great burst of protein that you’ll never get from regular salad dressing. Of course, you don’t have to use roasted red pepper-flavored hummus either. You can use plain hummus, or any flavor you like. I’m thinking sundried tomato, garlic or spinach-artichoke would be fantastic too! (And yes, all of those flavors exist. I highly recommend the spinach-artichoke! Like a way healthier version of the dip! Yum!)

I hope this redeems me at least a little. Now that I have some more time on my hands (and a holiday coming up! Memorial Day!) hopefully I’ll have a slew of new things coming your way.
